Our sparkling winemakers Laurent and Sofian are continuing their family’s winemaking tradition by using the methode champenoise process to make sparkling wine. The Gruet Family brought back sparkling winemaking to New Mexico in ____ and helped kickstart the new Mexico wine industry again. Laurent left Gruet Winery and joined the VARA team in 2021, followed by his nephew Sofian shortly after.

Because of them, we have been able to create a growing sparkling wine program, now consisting of six labels, including our fall 2024 release.

Our sparkling wines are known and praised for their high quality and delicious flavor. This way we are able to continue the tradition of classical winemaking while combining it with american grapes and inventions.
