Vara Winery and Distillery welcomes the creative, award-winning Executive Chef David Ruiz. Ruiz is adding fresh ideas to Vara’s beautiful, Spanish-influenced menu. New menu items include truffle popcorn, Spanish meatballs, and a Lamb Merguez sausage made from local, New Mexican lamb. Ruiz also brings a new take on Vara’s staple Spanish rice dish, paella. Which is revamped with a saffron aioli and topped with a cured lemon. The Vara team believes Ruiz’s talent will further elevate and add to the guest experience.
